LalBrew CBC-1™

LalBrew CBC-1™ has been specifically selected from the Lallemand Yeast Culture Collection for Cask and Bottle Conditioning applications due to its high resistance to alcohol and pressure. LalBrew CBC-1™ has a neutral flavor profile and does not metabolize maltotriose, therefore the original character of the beer is preserved after refermentation. The yeast will settle and form a tight mat at the bottom of the bottle or cask. LalBrew CBC-1™ is also an ideal strain for primary fermentation of dry ciders, mead and hard-seltzer. For simple sugar fermentations with appropriate yeast nutrition, LalBrew CBC-1™ achieves high attenuation with a clean and neutral flavor profile.

We like it for its neutral flavor, ease of prep and use. Allows us to hit our marks in terms of target CO2 volumes.
We noticed an improvement in head production and retention on our pours. I recommend this product to other brewers seeking improvement in carbonation quality.
Barrel of Monks brewing is a Belgian-centric brewery in Boca Raton, Florida and we have been using Lallemand yeasts since we opened over 5 years ago. We regularly use CBC-1 yeast for bottle conditioning our beers. We bottle condition all of our specialty beers and we have found this yeast strain to be highly reliable in producing the carbonation we need without a change in flavor profile. We have also used Abbaye Belgian Yeast and Belle Saison Yeast from Lallemand with great success. Cheers to Lallemand!
