ISY S-Reduce is a unique inactivated specific yeast autolysate rich in biologically bound copper, capable of removing sulfur off-flavors from beer including hydrogen sulfide (H₂S), dimethyl sulfide (DMS) and mercaptans. Brewers have been aware of sulfur compounds in brewing since 1898. Indeed in some beer styles it is perceived as a positive flavor.
However, when it it not part of your beer flavor profile, sulfur can create compounds such as H₂S (hydrogen sulfide) , SO₂ (sulfite) and DMS (dimethyl sulfide) which can negatively impact on your beer flavor. H₂S is produced by a variety of biological and non-biological factors, including wort composition, fermentation conditions and genetics of the yeast. It can also be produced by wild yeast and bacteria contamination.
Mode of action
AB Vickers ISY S-Reduce is rich in copper, which is immobilized within the yeast cells. When added to beer, the copper reacts with sulfur compounds, creating insoluble precipitates and slight haze. These compounds are then removed during yeast transfer or beer clarification, ensuring your brew remains clean and flavorful.

ISY S-Reduce™ is your natural solution for sulfur-free brews. It will help you avoid extended maturation periods needed to reduce sulfur off-flavors, ensuring a cleaner beer.
Store ISY S-Reduce in a cool, dry place, away from direct sunlight. Ensure the container is tightly sealed to maintain its effectiveness.
Add ISY S-Reduce towards the end of fermentation or during maturation. Limit contact with the beer to 3-5 days. Sulfur reduction is efficient and typically achieved within this period.
The recommended treatment rate is 10-30g/hL. Dissolve ISY S-Reduce™ in about 10x its weight of sterile, deaerated water. Stir well and mix thoroughly with the beer.
