LalBrew NovaLager™ is a true bottom-fermenting Saccharomyces pastorianus hybrid (non-GMO), selected to produce clean lager-style beers with the optimal fermentation performance of ale yeast.

LalBrew NovaLager™:

  • Produces lager styles at higher fermentation temperatures, lower pitch rates, and faster fermentation times than traditional lagers,
  • Produces a clean, unique lager profile with high attenuation and medium flocculation.
  • Is low VDK/diacetyl and will not produce hydrogen sulfide (H2S), leading to reduced maturation times associated with Lager beer production.

Just as hop breeders use selective breeding to produce unique varieties of hops, yeast geneticists can generate novel strains with desirable traits. Brewer’s yeast has two mating types (analogous to two sexes). Yeast reproduction can be asexual and sexual. While asexual reproduction generates identical cells to the parental yeast strain, sexual reproduction generates hybrid cells that contain one set of genes from each of the parental strains. LalBrew NovaLagerTM is a commercially available strain that was developed using this approach. It’s a true bottom-fermenting Saccharomyces pastorianus hybrid from the novel Group III (Renaissance Bioscience) lineage that has been selected to produce clean lager beers with unique flavor characteristics and superior fermentation performance.

No, this is not a genetically modified yeast. Classical breeding technologies were used to select this strain, similar to breeding traditional agricultural crop plants.

Very clean, mostly neutral with slight ester notes (red apple and fruits), low diacetyl and no H2S. 

Fermentations above 20°C are still clean, but less lager-like. 

Yes, this strain can be propagated or repitched using standard procedures.

Yes, this yeast can metabolize melibiose, like all the lager yeast strains.
